Yesterday we were having baked Salmon, so instead of just baking two pieces of Salmon I marinaded 4 chicken breasts and baked them along with the Salmon. I’m going to use the leftover chicken in meals for the next few days so I can whip up meals super quick and easy. Today I made Curry Walnut Chicken Wraps for lunch and it was delicious!
Spicy Hot Soy Marinade
1 T olive oil
1/2 T soy sauce
1 t. chili flakes
1 t. cracked pepper corns
Mix up in a rubbermaid and stir around with the whole chicken breasts (or tofu sliced thin actually) and make sure they are coated. Let sit for 30 min – 1 hour. Preheat oven to 375. Place a drying rack on a cookie sheet and place chicken on rack. Pour any excess marinade over the chicken. Bake 15 minutes and flip over, rotate the cookie sheet. Bake for 7-10 minutes more. Cut the chicken with a knife in the thickest part to see if it’s done. Set aside touse for meals later.
Curried Walnut Chicken Wrap
1 chicken breast – sliced into 1/4inch pieces
1 t. olive oil or canola oil
1/4 cup chopped walnut
1 t honey
1/4 small onion diced
1 1/2 T. mild curry
2 T shredded mozzarella cheese
1 T. hummus
1 cup mixed greens
1 flour tortilla (12 inch or larger)
Warm up the olive oil in a skillet on medium high heat. Add onions and walnuts, stir until onions turn a bright color.
Drizzle half the honey over the walnuts and onions. Stir until fragrant and the onions start to caramelize.
Add chicken and toss with the walnuts and onions. Drizzle remaining honey and sprinkle the curry over the chicken and toss until coated, rearrange the chicken so the pieces do not overlap.
Cook on high heat until mixture starts to sizzle. Divide mixture in half and put 1 T cheese over each portion. Cover to help cheese melt faster.
While cheese is melting lay out a tortilla on each plate and put 1 T hummus in the center of each, pile on the mixed greens. Slide each portion of the chicken mixture onto the greens. Wrap up and enjoy! We had a 1/2 cup chips and a 1/4cup cottage cheese with ours. Both helped balance out the spice of the chili flakes and curry.
Jason gave it a huge smile and “wow, this is delicious Kristin.” And I thought it was pretty tasty too.
