I love grilled cheese. Especially on homemade bread with a super sharp cheddar cheese. The thing is, it’s not always the most healthy meal – fat and carbs mostly. I’m not saying there aren’t some good things in there, but it’s not what I would think of as a “meal”. More like a snack. Well, let’s upgrade that grilled cheese into a one course meal.
Personally I like using up any veggies in my frig for my grilled cheese.
Onions, Tomatoes, and Avocado is my favorite combo, but anything you like with cheese works – broccoli, cauliflower, red peppers, etc – will go great in your sandwich. Oh and if you are in need of extra protein, put a little tuna or ham on there for a meaty melt.
The best way to make a grilled cheese that I’ve figured out over the years is this:
Gussied up Grilled Cheese
Cut up all the ingredients so they will be on hand to assemble the sandwich quickly.
Warm up a small skillet and melt the butter until bubbly.
Sprinkle the skillet with the Parmesan cheese and place one slice of bread in the pan. Layer your cheese first, then any other ingredients, then the second piece of bread on top.
Wait a few minutes until the bottom bread is browned and crispy. Pick up the sandwich with a spatula and sprinkle some more Parmesan in the pan. Flip the sandwich over to brown and crisp the other side. It helps to place a lid over the pan at this point to melt the cheese a little quicker. Once the bread is brown and the cheese is melted take it out of the pan and enjoy! Tomato soup always goes great with a delicious grilled cheese sandwich.

I was planning on posting this last Friday, but some things came into the mix of life I wasn’t expecting: jason taking the day off and then food poisoning for both of us. Not even left overs! We ate some bad cheese and we couldn’t tell if it was bad because it was a stinky cheese to begin with. So it goes!
